Ragu Carmela with Eggplant and Braised Parmigiano
Late summer brings baskets full of eggplant, the sweetest dry-farmed tomatoes that have been wooed by the sun all summer, and sweet onions perfect for caramelizing. So we put all those things together in this ragu sauce! After roasting the tomatoes and eggplant until lightly colored and their flavors have concentrated, we added diced Parmigiano rind, which gets all gooey and chewy like a gummy little savory Laffy Taffy but in a good way. Lord Jesus help us, this stuff is good. And limited.
