We named this pasta as such in order to recognize we aren’t doing this the old school way; this is an extruded Orecchiette rather than one made individually by hand and then flipped inside out by a 139 year old Nona. That said, the cup on this shape is perfect to hold onto little bits of broth, you can snuggle extra bits of garlic or sausage all up in there, and it will pair great with the classic broccoli rabe, or something stunning and new.
